Impromptu Free Day....VEGGIE style!

The only question I hear as much as "What do you eat?" is probably "What do you eat on a free day?" So here it is...pics and all!

Dinner Part 2 (8:30 pm)- other 1/2 of the veggie sub


Dinner (6 pm)- This was a 1st for me! I ordered my first veggie sub from Subway. I was kind of skeptical if this would be satisfying, as I ALWAYS order the roasted chicken breast, but I was amazed at how filling this was....might have been from all the food I ate earlier too, but honestly I REALLY enjoyed the veggie sub...It was kind of surprising! I am emailing the owner of this Subway to ask him to start carrying spinach too (like all the other Subways in the world). I'm going to be living in this house for a long time, and I need spinach on my subs!

Dessert- low fat vanilla ice cream + caramel + sprinkles + whipped cream

(I figured out the smart idea of using a soup bowl instead of the tiny dessert bowls they want you to use a long time ago)
Lunch (noon): Huge salad- (spring mix, broccoli, peppers, red onions, peas, celery, jicama, tomatoes, garbanzo beans, black beans, kidney beans, edamame, tofu, a couple croutons, quinoa, evoo & balsamic vinegar) + bowl of Texas tortilla soup (had some white beans in it, which I do not know the name of, but love...need to find out what these things are called..they're like a garbanzo bean but whiter looking) + slice of veggie pizza w/parmesan cheese (usually don't do the pizza here but do it occasionally if there is zuccini & squash on it)



Woke up this morning thinking about how amazing last night's scallops were at dinner, and also about how much I rely on at least 8 hours of sleep in order to function whatsoever. After dinner with family last night, hubby and I got invited to join some friends to celebrate the 25th bday of a friend of ours. Since we rarely ever do the whole "downtown" thing and we were already there, we thought we would really be old if we opted to just go home and go to bed...so we had the smart idea of heading over to The Belmont after dinner at about midnight and didn't get home until 2:30 am. Keep in mind we are usually asleep by 9:30 pm and up by 5:30 am. Needless to say, I slept in really late and have been tired all day and pretty much worthless, scooting around in my pj's, and enjoying the rainy day. I was too lazy to even make my own food and had a serious craving for Fresh Choice salad buffet....which I am completely addicted to. I declared an impromptu FREE DAY, put on some real clothes, and we headed out. I've now broken two of my own rules (the "no wine and no cheats for a couple weeks"...in less than 24 hours), but life WILL go on...I'm not sweating it. Believe me, there could be worse free meals than ones you can find at Fresh Choice, so I don't mind bending the rules juuuuust a little today. Even though I declared it a free day, I decided I'd still stick to starting my vegetarian experiment today. I even threw away some leftover salmon in the fridge, so IT'S OFFICIALLY BEGUN! Fresh Choice has tons of vegetarian options too, so I figured it would be a great place to start....LOVE that place!

  1. I've come to love veggie subs and/or veggie sandwiches - especially if you can get hummus on them!

    I thought that little soup bowl was a measuring cup! LOL...that is a smart idea for the ice cream, but now it makes a little more sense. It sounds like you guys had fun last night! Sometimes it's nice to take a day off and do nothing other than lounge in PJ's. :)

  2. Great job on your day 1 ~ I LOVE that you started it with a FREE DAY. I LOVE adding avocado at Subway because it makes it "feel" meater to me. I wish they would have HUMMUS because that would be the perfect veggie creation.

    LOVED your lunch and use of measuring cups too!

    I am not a fan of tofu but know alot of people who use it in stir fries and baked with BBQ sauce.

  3. Thanks for the props gals! I hate to disappoint, but those aren't measuring cups...just the soup bowls they have at Fresh Choice....much larger than a measuring cup! he he YES, they definitely need hummus at Subway...how yummy would that be?!
